nutritarian diet meal plan Vegan Cream of Broccoli Pasta

Don't knock it till you try it! It might sound like a weird combo, but I love this dish. I admit, it might not be for everyone, you kinda gotta like broccoli. If you are a fan of cream of broccoli soup and pasta, then this dish is for you! Sometimes I will blend the broccoli and mushrooms until it is nice and smooth (like I did in this video) and other times I will just pulse it and leave it a bit chunky, both ways are yummy.
-1 bag/box of pasta of choice
-1 head of broccoli (cook stems and all. This would be a great dish to use broccoli stems scraps in)
-1 package of mushrooms of choice
-1 container of low sodium veg broth
-1 cup raw cashews
-2 cups unflavored / unsweetened non-dairy milk
-1 cup nutritional yeast
-garlic powder
-onion powder
-seasoning blend (I use Trader Joe's 21 seasoning salute, but you can use any kind of mix, like an Italian mix) *Optional
-Salt and pepper

~Cook pasta

~Drain pasta and put in a large bowl

~In a pot cook whole head of broccoli, mushrooms, 1 container of veg broth, 1 tbsp garlic powder, 1 tbsp onion powder, 1 tbsp seasoning mix, salt and pepper to taste.

~Cook and set aside to cool

~Make cheesy cream sauce
-1 cup raw cashews
-1 cup nutritional yeast
-2 cups non-dairy milk
-1/2 tbsp onion powder
-1/2 tbsp garlic powder
-1/2 tbsp seasoning mix
-salt & pepper to taste
*If you like more flavor and seasonings, you can use 1 tbsp of each spice.

~Add creamy sauce to pasta and mix

~Blend broccoli mixture
-after cooled down a bit dump the whole pot of broccoli, mushroom mix into blender and blend, add to pasta and stir.

~Put into a casserole dish and bake in a preheated oven @375 degrees for around 15 minutes, until hot.

~Serve and enjoy! I like to add a little Vegan Go Veggie Parm cheese, sriracha sauce and some vegan sour cream. Check out my recipe for that- http://youtu.be/BptRm6P4mWA
